Every pizzeria has a quiet bestseller - the pizza that never makes the menu cover but shows up in the order history again and again. We pulled six months of ticket data and asked our team which toppings people actually choose when nobody is looking. Here are the five that win, in order of devotion.

1. Pepperoni, but Make It Crispy

Number one with a bullet. We use large-diameter pepperoni cups that curl into little bowls of crispy, spiced oil in the oven - the edges char, the centres go translucent and the cups hold a pool of flavour. Our regulars know to ask for it "crispy" so it gets an extra thirty seconds on the floor.

2. Fresh Burrata

Mozzarella is the backbone, but burrata is the upgrade. We drop cold, creamy burrata onto the pizza after it leaves the oven so the outside stays warm and the inside stays cool and milky. Cut it open at the table and it floods the slice. It is the most requested "add-on" on the menu by a wide margin.

3. Mushrooms, Pre-Cooked

Raw mushrooms release water in the oven and steam your pizza. We roast ours first - tossed in olive oil and thyme until they shrink, brown and concentrate - so they come out of the 400°C oven with texture and depth instead of soggy slices. Our truffle mushroom special sells out almost every weekend.

4. Jalapeno and Honey

Sweet-heat is the sleeper hit of the menu. We brush a thin line of hot honey over the finished pizza and scatter pickled jalapenos that keep their crunch through the bake. It started as a staff lunch experiment. It is now a permanent menu item with a cult following.

5. The Olives Nobody Orders... Until They Try

Castelvetrano olives - bright green, buttery and mild - are the sleeper topping. People order them once on a whim and then cannot order anything else. We pit them by hand so you never bite down on a stone, and their gentle salinity balances rich meats beautifully.
