How to Reheat Pizza Without Ruining It

Cold pizza is a breakfast institution, but reheated pizza is where most kitchens go wrong. The microwave turns crust into cardboard and cheese into rubber. The good news: with one pan and a splash of water, you can bring yesterday’s slice back to life in four minutes - crispier than delivery, guaranteed.

How to Reheat Pizza Without Ruining It

Method One: The Skillet-and-Lid Trick (Our Favourite)

Set a non-stick or cast-iron pan over medium heat. Place the slice in the dry pan and let the bottom crisp for about a minute. Add a teaspoon of water to the edge of the pan - not on the pizza - and cover immediately. The steam melts the cheese while the pan keeps the crust crispy. After ninety seconds, remove the lid and let the base crisp again for another minute. The result is a slice with a crackly bottom and molten cheese.

Method Two: The Oven Reset

Preheat your oven to 220°C with a baking steel or an inverted baking tray inside. When it is properly hot, slide the pizza directly onto the steel - no tray, no foil. Three to four minutes is all it takes. This is the closest home method to a real wood-fired re-bake, because the intense heat hits the base first and re-crisps it before the cheese has a chance to sweat.

Method Three: The Air Fryer

Air fryers are surprisingly excellent at this. Heat to 180°C, lay the slice in the basket and cook for two to three minutes. The circulating air crisps both the base and the toppings while the cheese bubbles. It is faster than the oven and nearly as good as the pan method.

The One Method to Never Use

You already know. The microwave steams the crust into a damp towel and turns pepperoni into rubber coins. If you must microwave - maybe it is 2am and your pan is dirty - do it on 50% power for 45 seconds and then finish the slice in a dry pan for a minute. Every second of pan time rescues a bit of crunch.
